Coconut Tapioca Pudding – Easy Recipe

Coconut Tapioca Pudding… This is my way to make this delicious dessert.

Hi Guys, I’m a health-conscious, Brazilian woman.

My recipes, however, are very good.  See below and enjoy.

Today my recipe is Coconut Tapioca Pudding.

 

Tapioca is popular in my country. I have many more tapioca recipes on my site, but they are in Portuguese.

I make this recipe with coconut milk but you can use whole milk if you aren’t vegan.

I do not recommend making with almond milk, as the heat seems to alter the taste of the almond milk.

This recipe is very easy to make and the results are awesome.

I limit the number of ingredients to keep it simple and to keep the calories low.

 

 

 

Coconut Tapioca Pudding

Ingredients

-1 cup small pearl tapioca

 

 

-5 cups coconut milk or substitute with whole milk

-1/4 cup unsweetened coconut flakes

-1/4 cup agave or other natural sweeteners, like  honey or coconut sugar

-1/4 teaspoon kosher salt

Optional:

• 1/2 teaspoon pure vanilla extract

 

How To:

 

• In a saucepan mix tapioca and coconut milk 
• Let soak for 30 minutes
• Add dried coconut and kosher salt
• Put the saucepan on the stove at medium and stir constantly for 20 minutes
• Remove from heat and stir in  agave (or your other chosen sweetener)
• Wait to cool and put in the refrigerator
• Serve with sliced fruits, coconut flakes, and slivered almonds

 

If you opt to use honey wait for the tapioca to cool slightly before adding, as the high temperatures affect the properties of the honey.
